Chocolate-Mint Meringue Kisses


2 egg whites
1/2 tsp peppermint extract
1/3 cup sugar
1/2 cup semisweet chocolate minimorsels


1) Beat egg whites (at room temperature in a large bowl at high speed with an electric mixer) 1 minute. Gradually add sugar, 1 tablespoon at a time, beating until stiff peaks form and sugar dissolves (2 to 4 minutes). Gently fold in chocolate morsels and peppermint extract.

2) Drop by heaping teaspoonfuls onto cookie sheets lined with wax paper. Bake at 300 for 35 minutes. Cool slightly on cookie sheets; gently remove from wax paper and cool completely on wire racks.

Yield - 3-1/2 dozen

Each cookie = 17 calories, 0.7 grams fat, 0 mg cholesterol, 2 mg sodium.
