Cod with Mediterranean Salsa

Salsa:

1/3 cup Kalamata Olives pitted and sliced

1 plum tomato, peeled, seeded and diced

1 shallot, minced

1 T. Fresh basil, minced

1 T. capers

¼ t. orange zest grated

1 t. Fresh lemon juice

1 t. olive oil

Salt

Pepper

Cod:

1# cod fillets

Lemon pepper

Cooking spray

1 t. olive oil

 

  1. Mix all salsa ingredients together and adjust salt and pepper to taste
  2. Pat fish dry and season with lemon pepper
  3. Spray non-stick skillet with cooking spray and heat over medium high heat
  4. Add olive oil to pan and heat until hot
  5. Cook fillets 4 minutes on each side (depends on thickness of fillet) until done.
  6. Add salsa on top and serve
