Ingredients

6 tablespoons oil
1/3 cup sugar
1 egg
1 1/2 cups skim milk
1 cup whole wheat flour
1 cup buckwheat flour
3/4 teaspoon salt
4 teaspoons baking powder
3/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1 large apple, chopped

Instructions

1) Stir together oil, sugar, egg and milk. Mix dry ingredients together. Add liquid mixture to the dry ingredients, stirring only enough to moisten the flour, then add the chopped apple.

2) Spoon the batter into oiled 2 1/2 inch muffin tins, filling each cup 2/3 full. Bake at 400 degrees for 20-25 minutes.

Yield – 18 (2 1/2″) muffins
